Healthy Eating, Continued

I am back! The biggest request I have received in the past several months is for recipes.
Here is my favorite Lentil Soup Recipe:

Ingredients:
Dried Lentils - 16 oz
2-3 Cans of low Sodium Chicken Broth (Swanson's)
Escarole - 1-2 large bunches; finely chopped.
1 cup of chopped sweet onion
2 gloves garlic - finally minced
Salt and Pepper to taste.

Place lentils in large pot, cover with water until the lentils are submerged by at least 2 inches. Soak overnight. In am, drain and rinse lentils.
Sauté onions and garlic in a small amount of chicken broth (If you are allowed fats you can use olive oil) until translucent.
Transfer to a stock pot, add lentils and chicken stock until lentils are covered. Simmer until cooked. Add Escarole and heat until it is wilted.  Add salt and pepper to taste.
Top with freshly squeezed lemon juice or parmesan cheese (if allowed).
